Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1/2 cup fresh lime juice about 4-5 limes
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño thinly sliced (seeds removed for less heat)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium cucumber thinly sliced
  • 1 ripe avocado diced
  • 1/4 red onion thinly sliced
  • Tortilla chips for serving

Method
 

  1. In a large bowl, combine the shrimp, lime juice, cilantro, jalapeño, salt, and black pepper. Toss to coat the shrimp evenly.
  2. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour, allowing the shrimp to marinate and 'cook' in the lime juice.
  3. After marinating, add the cucumber, avocado, and red onion to the shrimp mixture. Gently toss to combine.
  4. Serve immediately with tortilla chips on the side.
