Ingredients
  

  • 1 cup shelled edamame fresh or frozen
  • 1 ripe avocado
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 4 slices whole grain bread
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes optional
  • Fresh parsley or cilantro for garnish

Method
 

  1. If using frozen edamame, cook according to package instructions until tender. Drain and let cool.
  2. In a medium bowl, mash the avocado with a fork. Add the lemon juice, lemon zest, salt, and pepper. Mix until well combined.
  3. In a small bowl, combine the olive oil, garlic powder, and red pepper flakes (if using). Brush this mixture onto one side of each slice of bread.
  4. Toast the bread slices in a skillet over medium heat or in a toaster until golden brown.
  5. Spread the avocado mixture generously on the toasted side of each slice of bread.
  6. Top each open-faced sandwich with a portion of the cooked edamame.
  7. Garnish with fresh parsley or cilantro before serving.
