- Heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add 1 finely chopped onion and sauté for 3-4 minutes until softened. Stir in 2 minced garlic cloves and cook for an additional minute.
- Add 1 cup of long-grain rice to the saucepan, stirring gently for 1-2 minutes.
- Pour in 2 cups of warm chicken or vegetable broth, followed by the zest and juice of 1 lemon. Sprinkle in 1 teaspoon of dried oregano, and season with salt and black pepper to taste. Stir well.
