  • 1 cup Long-Grain Rice Basmati or jasmine recommended.
  • 2 cups Chicken or Vegetable Broth Use vegetable broth for a vegetarian option.
For the Aromatics
  • 2 tablespoons Olive Oil Extra virgin preferred.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
For Flavoring
  • 1 each Lemon Zest Organic lemons are preferable.
  • 1 each Lemon Juice Freshly squeezed.
  • 1 teaspoon Dried Oregano Fresh oregano can replace at three times the amount.

For Garnish
  • 1/4 cup Fresh Parsley Chopped.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add 1 finely chopped onion and sauté for 3-4 minutes until softened. Stir in 2 minced garlic cloves and cook for an additional minute.
  2. Add 1 cup of long-grain rice to the saucepan, stirring gently for 1-2 minutes.
  3. Pour in 2 cups of warm chicken or vegetable broth, followed by the zest and juice of 1 lemon. Sprinkle in 1 teaspoon of dried oregano, and season with salt and black pepper to taste. Stir well.
  4. Bring the mixture to a gentle boil, then cover and reduce heat to low. Simmer for 15-18 minutes, until rice is tender and liquid is absorbed.
  5. Remove from heat and let sit covered for 5 minutes. Uncover and fluff rice gently with a fork. Garnish with chopped fresh parsley.
