Ingredients
  

Dressing
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1-2 chiles chipotle chiles in adobo
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
Pasta and Protein
  • 12 ounces bowtie pasta
  • 1 pound ground beef
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
Veggies
  • 1 medium red onion (optional)
  • 1 medium red bell pepper (optional)
  • 1 cup black beans drained and rinsed
  • 1 cup corn
  • 1 cup cherry tomatoes halved
  • 1/4 cup scallions sliced
Toppings
  • 1 cup Monterey Jack cheese shredded
  • fresh cilantro optional

Method
 

Preparation
  1. In a small bowl, whisk together the dressing ingredients until well combined. Set aside.
  2. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and toss with half of the dressing.
  3. In a skillet over medium-high heat, cook ground beef until browned. Season with spices, then drain excess fat.
  4. In a large bowl, combine pasta, beef, beans, corn, tomatoes, and mix remaining dressing. Toss gently.
  5. Transfer to a serving dish and top with cheese, scallions, and optional cilantro. Serve cold or at room temperature.
