Preparation Steps
  1. Begin by washing and peeling your potatoes, then cut them into bite-sized pieces.
  2. In a large pot, bring water to a boil and add the potato pieces, cooking for about 10-15 minutes until fork-tender but not fully cooked. Drain and set aside.
  3. In a mixing bowl, drizzle the partially boiled potatoes with olive oil and sprinkle on your seasonings. Toss until coated.
  4. Preheat your oven to 425°F (220°C). Spread the seasoned potatoes on a baking sheet and bake for approximately 25-30 minutes until golden brown.
  5. While the potatoes bake, prepare your chipotle sauce by blending mayonnaise and chipotle peppers until smooth.
