- Preheat your oven to 325°F (160°C).
- Pat the beef dry, then coat with flour, salt, and pepper.
- Heat olive oil in a Dutch oven and cook pancetta for 5-7 minutes, then remove.
- Brown the beef in the same pot for 4-5 minutes each side.
- Add butter, shallots, carrots, and garlic; sauté for 6-8 minutes.
- Deglaze with red wine, scraping the bottom, and reduce for 5 minutes.
- Add tomatoes, prunes, and sherry vinegar, simmer for 2 minutes.
- Create bouquet garni with thyme, bay leaves, parsley stems, and orange peel.
- Pour in beef broth, return beef and pancetta, and stir to combine.
- Cover and cook in the oven for 2-3 hours until tender.
- Remove and discard bouquet garni, stir in smashed garlic.
- Taste and adjust seasoning, serve warm garnished with parsley.
