Method
 

Step‑By‑Step Instructions
  1. Preheat your oven to 325°F (160°C).
  2. Pat the beef dry, then coat with flour, salt, and pepper.
  3. Heat olive oil in a Dutch oven and cook pancetta for 5-7 minutes, then remove.
  4. Brown the beef in the same pot for 4-5 minutes each side.
  5. Add butter, shallots, carrots, and garlic; sauté for 6-8 minutes.
  6. Deglaze with red wine, scraping the bottom, and reduce for 5 minutes.
  7. Add tomatoes, prunes, and sherry vinegar, simmer for 2 minutes.
  8. Create bouquet garni with thyme, bay leaves, parsley stems, and orange peel.
  9. Pour in beef broth, return beef and pancetta, and stir to combine.
  10. Cover and cook in the oven for 2-3 hours until tender.
  11. Remove and discard bouquet garni, stir in smashed garlic.
  12. Taste and adjust seasoning, serve warm garnished with parsley.
