Preparation Steps
  1. In a large bowl, combine Greek yogurt, lemon juice, garlic, paprika, cumin, oregano, red pepper flakes, cinnamon, and salt to create the marinade. Add chicken thighs, coat well, cover, and refrigerate for at least 30 minutes.
  2. Preheat oven to 400°F (200°C). Slice onion into thick rounds and arrange in a baking dish as a base for the chicken.
  3. Stack marinated chicken thighs over the onion base to form a 'tower'.
  4. Bake in preheated oven for 60 minutes, until the chicken reaches 165°F (74°C) and is browned.
  5. Prepare toppings by mixing sliced red onion, lemon juice, sumac, and a pinch of salt in a bowl.
  6. Once baked, let the chicken rest for a few minutes before slicing. Serve with prepared toppings.
