Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry each russet potato thoroughly. Prick the skin a few times, drizzle with olive oil and sprinkle with kosher salt.
  3. Place prepared potatoes on a baking sheet and roast for 45-60 minutes until tender.
  4. Cut each potato in half lengthwise and scoop out the inside, leaving a 1/4-inch border.
  5. Return the skins to the oven cut-side up and roast for an additional 30 minutes until golden brown.
  6. Fill each skin with mashed potatoes, stuffing, turkey, and top with cheese.
  7. Bake the filled skins for 15-20 minutes or until cheese is melted and bubbly.
  8. Serve topped with cranberry sauce and chives.
