  • 1 can chickpeas, drained and rinsed
  • 1 tbsp olive oil
For the Curry Flavor
  • 1 can coconut milk full fat for creaminess
  • 1 cup vegetable broth
  • 2 tbsp curry powder
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp soy sauce or tamari for gluten-free
For Serving
  • 1 cup fresh cilantro, chopped for garnish
  • 2 cups cooked rice for serving

Method
 

Cooking Steps
  1. Heat olive oil in a large pot over medium heat.
  2. Add diced sweet potatoes and cook for 5-7 minutes, until slightly tender.
  3. Add minced garlic and ginger; cook for another minute.
  4. Stir in curry powder and mix well, cooking for about 1 minute.
  5. Add chickpeas, coconut milk, and vegetable broth; bring to a boil.
  6. Reduce heat to low and simmer for 20 minutes until sweet potatoes are fully cooked.
  7. Stir in soy sauce and adjust seasoning as needed.
  8. Serve over cooked rice, garnished with fresh cilantro.
