  • 4 cups Boiling Water Use boiling hot water for soaking the rice.

  • 1/4 cup Sugar Sweeten to your preference.

  • 1 tbsp Pandan Paste Available at Asian grocery stores.
  • 1 tbsp Magenta Plant Or purple food coloring if unavailable.

  • 1 cup Fresh Coconut Grated for texture.
  • 1/4 cup Crushed Peanuts Use as desired for garnish.

Method
 

Step-by-Step Instructions
  1. Prepare Color Component: For magenta version, boil chopped magenta plant in water for 15 minutes, strain and retain liquid.
  2. Rinse Rice: Rinse glutinous rice under cool water, swirling gently and discarding cloudy water three times.
  3. Soak Rice: Soak rinsed rice in boiling water for 5 minutes until fully submerged.
  4. Strain & Rinse: Strain rice and rinse briefly under warm water to reduce stickiness.
  5. Soak Further: Submerge rinsed rice in boiling water for an additional 25 minutes, stirring every 5 minutes.
  6. Combine Colors: If using magenta plant, mix retained liquid with soaked rice and enough boiling water.
  7. Microwave Cooking: Transfer to microwave-safe dish, mix in coconut milk, salt, and color component. Cover and microwave on high for 6 minutes.
  8. Add Sugar: Remove, fold in sugar, cover, and microwave for another 4 minutes.
  9. Check Texture: Fluff rice and adjust moisture if needed with coconut milk, microwaving as required.
  10. Serve: Rest for 10 minutes before serving in bowls, garnishing with optional toppings.
