Ingredients
  

  • 1 pound ground beef or ground turkey
  • 1 tablespoon vegetable oil
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon gochujang Korean chili paste
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger grated
  • 1/2 teaspoon black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup carrots shredded
  • 1/4 cup green onions sliced
  • 1/4 cup cilantro chopped
  • 1/2 cup mayonnaise for Yum Yum Sauce
  • 2 tablespoons ketchup for Yum Yum Sauce
  • 1 tablespoon rice vinegar for Yum Yum Sauce
  • 1 tablespoon sugar for Yum Yum Sauce
  • 1 teaspoon garlic powder for Yum Yum Sauce
  • 1 teaspoon paprika for Yum Yum Sauce
  • Salt and pepper to taste for Yum Yum Sauce

Method
 

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the ground beef or turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  4. In a small bowl, whisk together the soy sauce, brown sugar, gochujang, sesame oil, ginger, and black pepper. Pour this mixture over the cooked meat and stir to combine. Cook for another 2-3 minutes until heated through.
  5. While the meat is cooking, prepare the Yum Yum Sauce by whisking together mayonnaise, ketchup, rice vinegar, sugar, garlic powder, paprika, salt, and pepper in a separate bowl. Adjust seasoning to taste.
  6. Warm the tortillas in a dry skillet or microwave until pliable.
  7. To assemble the tacos, place a generous spoonful of the meat mixture on each tortilla. Top with shredded cabbage, carrots, green onions, and cilantro. Drizzle with Yum Yum Sauce.
  8. Serve immediately and enjoy!
