  • 4 cups mixed salad greens such as spinach and arugula
  • 1 pint fresh strawberries hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds toasted
  • 1/4 cup red onion thinly sliced
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon poppy seeds
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the mixed salad greens, sliced strawberries, crumbled feta cheese, toasted almonds, and red onion. Toss gently to combine.
  2. In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, and poppy seeds until smooth. Season with salt and pepper to taste.
  3. Drizzle the dressing over the salad just before serving and toss gently to coat.
