  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 pound smoked sausage sliced
  • 4 cloves garlic minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes optional
  • 1 cup cherry tomatoes halved
  • 1/2 cup green onions sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. In a small bowl, whisk together the honey, soy sauce, apple cider vinegar, and red pepper flakes (if using). Pour this mixture into the skillet with the sausage and garlic.
  5. Add the halved cherry tomatoes and cooked penne pasta to the skillet. Toss everything together to coat the pasta and sausage in the sauce. Cook for another 2-3 minutes until heated through.
  6. Season with salt and pepper to taste. Remove from heat and stir in the sliced green onions.
  7. Serve hot, garnished with fresh parsley if desired.
