  • 1 cup Rice white, brown, or quinoa
  • 1 medium Onion chopped, yellow or white
  • 2 cloves Garlic minced
  • 1 cup Tomato Sauce or salsa for a spicy kick
  • 1 cup Cheese shredded mozzarella or cheddar, optional
  • to taste Spices Italian seasoning, salt, pepper

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients.
  2. In a large skillet, cook the ground beef over medium heat until fully browned. Drain excess fat.
  3. Sauté chopped onions and minced garlic in the same skillet until onions are translucent.
  4. Mix cooked rice and tomato sauce into the skillet with beef and veggies. Season with spices to taste.
  5. Prepare bell peppers by slicing off tops and removing seeds. Place in a baking dish.
  6. Stuff each bell pepper with the beef mixture, packing it lightly.
  7. Cover with foil and bake for 25–30 minutes until peppers are tender.
  8. In the last 10 minutes of baking, optionally add shredded cheese and bake uncovered.
  9. Remove from oven, cool for 5 minutes, and carve jack-o'-lantern faces on each pepper.
