Ingredients

  • 14 oz Firm Tofu Crumble thoroughly for smooth mixture
  • 1 cup Plant-Based Milk Almond, soy, or oat milk
  • 1 cup Nutritional Yeast Crucial for cheesy flavor
  • Frozen Tater Tots For crispy topping
For the Seasoning
  • 1 tbsp Garlic Powder Fresh garlic can be used
  • 1 tsp Onion Powder Feel free to use fresh onions
  • 1 tsp Turmeric Brings color; can be omitted
  • 1 tsp Paprika Smoked paprika adds depth
  • 1 tsp Salt Adjust according to taste
  • ½ tsp Black Pepper Freshly ground is best
For the Veggie Mix
  • 2 cups Mixed Vegetables Spinach, bell peppers, or onions suggested
  • ¼ cup Fresh Herbs Optional garnish; chives or parsley

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Crumble the firm tofu in a large bowl and mix with plant-based milk, nutritional yeast, garlic powder, onion powder, turmeric, paprika, salt, and black pepper.
  3. Heat a skillet and sauté the mixed vegetables for 5-7 minutes.
  4. Fold sautéed vegetables into the tofu mixture.
  5. Grease a 9x13 inch baking dish and pour the tofu mixture into it.
  6. Layer the frozen tater tots over the tofu mixture.
  7. Bake for 30-40 minutes until tater tots are golden brown.
  8. Let cool for 5 minutes before serving.
