Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 1 minute. Once the oil is shimmering, add 1 lb of seasoned boneless, skinless chicken breasts. Cook each side for 6-7 minutes until golden brown and cooked through, reaching an internal temperature of 165°F. Remove the chicken from the skillet and set it aside on a plate.
  2. In the same skillet, lower the heat and add 1/2 cup of creamy peanut butter, 1/4 cup of soy sauce, 2 tablespoons of honey, and 2 tablespoons of rice vinegar. Stir in 2 minced garlic cloves, 1 tablespoon of minced fresh ginger, and 1/2 teaspoon of red pepper flakes. Mix everything together for about 2-3 minutes, until the sauce becomes smooth and creamy.
