  • 1/4 cup Apple Cider Vinegar or white vinegar
  • 2 tablespoons Soy Sauce preferably low-sodium
For the Vegetables
  • 1 cup Pineapple Chunks fresh or canned
  • 1 cup Bell Peppers any color, chopped
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
For Garnish
  • 1 tablespoon Sesame Seeds optional
  • 2 stalks Green Onions sliced

Method
 

Step-by-Step Instructions
  1. Begin by cutting the boneless chicken breasts into bite-sized pieces and coat with cornstarch. Let sit for a few minutes.
  2. Heat a tablespoon of vegetable oil in a large skillet over medium-high heat. Add the coated chicken and cook for 5-7 minutes until golden brown. Remove chicken and set aside.
  3. In the same skillet, add more oil if needed and sauté onions, bell peppers, and minced garlic for 3-4 minutes until fragrant.
  4. Combine ketchup, brown sugar, apple cider vinegar, and soy sauce in a bowl, whisk until smooth.
  5. Return chicken to the skillet, pour the sauce over, and simmer for 2-3 minutes, allowing flavors to meld.
  6. Fold in pineapple chunks and cook for another minute to warm through.
  7. Remove from heat, garnish with sesame seeds and green onions, and serve immediately.
