For the Thickening
  • 2 tablespoons Cornstarch Arrowroot powder is an alternative.
  • 4 tablespoons Water For the slurry.
For Serving
  • 2 cups Cooked Rice Quinoa or cauliflower rice can be used.
  • 2 tablespoons Green Onions Chopped, for garnish.
  • 1 tablespoon Sesame Seeds For garnish.

Step-by-Step Instructions
  1. Prepare your slow cooker by placing the boneless chicken thighs or breasts at the bottom, cutting them into smaller pieces if desired.
  2. In a mixing bowl, whisk together the sweet chili sauce, low-sodium soy sauce, rice vinegar, honey, minced garlic, and grated ginger.
  3. Layer the sliced red and yellow bell peppers and onions over the chicken in the slow cooker.
  4. Pour the prepared sauce over the chicken and vegetables, ensuring everything is well-coated. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Mix cornstarch with water to create a slurry. Add this to the slow cooker and stir into the sauce. Increase heat to high and cook for an additional 30 minutes.
  6. Serve the Slow Cooker Sweet Chili Chicken over a bed of cooked rice, quinoa, or cauliflower rice. Garnish with chopped green onions and sesame seeds.
