Ingredients
  

For the Curry Base
  • 4 cups cubed potatoes Yukon Gold or red potatoes preferred
  • 1 cup green peas fresh or frozen
  • 1 medium onion finely chopped
  • 2 medium tomatoes finely chopped
  • 2 tablespoons vegetable oil for sautéing
For the Spices
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds toasted
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder adjust to taste
  • 1 teaspoon garam masala
  • to taste salt
For the Finish
  • 1.5 cups water
  • 1 bunch fresh cilantro leaves for garnish

Cooking Instructions
  1. Heat 2 tablespoons of vegetable oil in a large pan over medium heat. Sprinkle in 1 teaspoon of cumin seeds and 1 teaspoon of mustard seeds. Cook for 30 seconds.
  2. Add 1 finely chopped onion, stir frequently for about 5-7 minutes until golden brown.
  3. Stir in 1 tablespoon of ginger-garlic paste and sauté for 1-2 minutes.
  4. Add 2 finely chopped tomatoes and cook for 5-7 minutes until they soften.
  5. Sprinkle in 1 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 1 teaspoon of garam masala, along with salt to taste. Stir for 1-2 minutes.
  6. Fold in 4 cups of cubed potatoes and cook for 2 minutes.
  7. Pour in 1.5 cups of water, bring to a boil, then reduce heat and let simmer for 10-15 minutes.
  8. Add 1 cup of green peas and cook for an additional 5 minutes.
  9. Remove from heat and garnish with freshly chopped cilantro leaves.
