Ingredients
  

For the Tortillas
  • 8 pieces soft corn tortillas or flour tortillas as alternative
For the Shrimp
  • 1 pound raw shrimp medium-sized, peeled
  • 2 tablespoons gochujang spicy Korean chili paste
  • 3 cloves garlic freshly minced
  • 1 tablespoon ginger fresh or ground
  • 3 tablespoons low-sodium soy sauce or tamari for gluten-free
  • 1 tablespoon honey or maple syrup for vegan
  • 1 tablespoon toasted sesame oil or olive oil for cooking
  • 1 tablespoon cooking oil for frying shrimp
For the Lime Crema
  • 1/2 cup mayonnaise or Greek yogurt
  • 1/2 cup sour cream or non-dairy sour cream
  • 1 tablespoon lime zest from fresh limes
  • 2 tablespoons lime juice from fresh limes
  • salt to taste
  • pepper to taste
For Optional Toppings
  • kimchi or fresh salsa or coleslaw
  • 1 medium cucumber sliced for crunch
  • cheese optional, for added creaminess

Method
 

Prepare Lime Crema
  1. In a mixing bowl, whisk together mayonnaise, sour cream, lime zest, lime juice, salt, and pepper until smooth. Cover and refrigerate for 30 minutes.
Marinate Shrimp
  1. In a separate bowl, combine gochujang, garlic, ginger, soy sauce, honey, sesame oil, and cooking oil. Whisk until well-blended. Add shrimp and coat thoroughly. Marinate for 10 minutes.
Warm Tortillas
  1. Preheat a dry skillet over medium heat. Warm each tortilla for about 30 seconds on each side.
Cook Shrimp
  1. In the same skillet, add cooking oil and heat over medium-high. Add marinated shrimp in a single layer and cook for 2-3 minutes until opaque and slightly charred.
Assemble Tacos
  1. Spread creamy lime crema on each tortilla, layer with shrimp, and add your choice of toppings.
