  • 2 tablespoons Maple Syrup or Brown Sugar/Coconut Sugar
  • 2 tablespoons Coconut Aminos or Tamari/Soy Sauce
  • 1 tablespoon Rice Vinegar or Apple Cider Vinegar
  • 1 tablespoon Toasted Sesame Oil or regular sesame oil
  • 1/4 teaspoon Red Pepper Flakes optional
  • 1 tablespoon Arrowroot Powder or Cornstarch
Filling
  • 2 tablespoons Olive Oil or Avocado Oil
  • 1 pound Ground Beef or ground turkey/pork/bison
  • 2 cloves Garlic minced
  • 1 tablespoon Fresh Ginger grated
  • 1 medium Red Bell Pepper chopped
  • 1 cup Shredded Carrots or zucchini/shredded cabbage
  • 3 stalks Green Onions sliced
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Ground Pepper
Wrapping
  • 8 leaves Boston Bibb Lettuce or romaine/iceberg
  • 1 tablespoon Sesame Seeds for garnish
Optional Serving
  • 1 cup Steamed White Rice or Cauliflower Rice

Method
 

Preparation
  1. In a measuring cup, whisk together maple syrup, coconut aminos, rice vinegar, toasted sesame oil, and optional red pepper flakes. Gradually add arrowroot powder, stirring until combined and smooth.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef, cooking for about 5 minutes until browned.
  3. Stir in minced garlic and grated ginger into the skillet with cooked beef, sauté for 1-2 minutes until fragrant.
  4. Add chopped red bell pepper and shredded carrots to the skillet. Sauté for an additional 3-4 minutes until tender.
  5. Pour the prepared sauce over the beef and vegetable mixture, stirring to combine. Let it simmer for 2-3 minutes to thicken.
  6. Stir in sliced green onions just before serving. Spoon the beef and veggie mixture into lettuce leaves and garnish with sesame seeds.
