  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering, about 2 minutes.
  2. Add 2 cups of diced yellow potatoes, 1 chopped yellow onion, and 1 diced jalapeño pepper. Sauté for about 5 minutes until golden and tender.
  3. Stir in 3 minced garlic cloves and cook for an additional minute. Then, add 1 pound of ground beef and brown for about 5 minutes until no longer pink.
