Ingredients

  • 2 tablespoons soft dark brown sugar can use light brown sugar
  • 3 cloves garlic crushed before adding
  • ¼ cup dark soy sauce reduce sodium if preferred
  • ¼ cup oyster sauce or mushroom sauce for vegetarian option
  • 1 cup chicken stock homemade preferred
For the Stir-Fry
  • 2 tablespoons sunflower oil can substitute with vegetable oil
  • 300 g chicken breast cut into thin strips
  • 1 teaspoon Chinese 5 Spice reduce if sensitive to strong spices
  • 1 bag stir-fry vegetable mix or fresh diced veggies like bell peppers and bean sprouts
For the Noodles
  • 200 g dry noodles dried egg noodles or straight-to-wok noodles

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together the cornflour, soft dark brown sugar, and crushed garlic. Stir in dark soy sauce, oyster sauce, and chicken stock. Set aside.
  2. Bring a large pot of water to a boil and add dry noodles. Cook for 4-5 minutes until tender but al dente. Drain and rinse under cold water.
  3. In a large frying pan, heat sunflower oil over medium-high heat. Add chicken breast and stir-fry for 6-7 minutes until golden brown.
  4. Add stir-fry vegetable mix to the pan. Stir-fry for 4-5 minutes until tender yet vibrant.
  5. Drain noodles and add to the pan with chicken and vegetables. Pour sauce over and combine, cooking for an additional 3-4 minutes until the sauce thickens.
  6. Toss all ingredients together until well combined. Garnish with chopped spring onions and serve immediately.
