Method
 

Step-by-Step Instructions
  1. In a bowl, combine shrimp with olive oil and Cajun seasoning and let marinate for about 15 minutes.
  2. Bring a large pot of salted water to a boil. Cook fettuccini pasta until al dente for 8-10 minutes. Drain and set aside to keep warm.
  3. In a frying pan over medium heat, melt butter. Sauté mushrooms and shallots for 5-7 minutes until tender. Remove and keep warm.
  4. In the same pan, add marinated shrimp and cook for 2-3 minutes on each side until pink and opaque. Transfer to the plate with vegetables.
  5. Pour chicken broth into the frying pan, scraping up bits from the bottom. Boil and reduce to about ¼ cup, approx. 4-5 minutes.
  6. Mix sour cream and cornstarch in a bowl until smooth, then stir into the broth in the pan. Cook for 3-4 minutes until sauce thickens.
  7. Combine cooked shrimp and sautéed vegetables back into the sauce. Season with salt and pepper, heat through for an additional 2-3 minutes.
  8. Serve the Blackened Shrimp Stroganoff over warmed fettuccini, garnishing with fresh herbs if desired.
