- In a bowl, combine shrimp with olive oil and Cajun seasoning and let marinate for about 15 minutes.
- Bring a large pot of salted water to a boil. Cook fettuccini pasta until al dente for 8-10 minutes. Drain and set aside to keep warm.
- In a frying pan over medium heat, melt butter. Sauté mushrooms and shallots for 5-7 minutes until tender. Remove and keep warm.
- In the same pan, add marinated shrimp and cook for 2-3 minutes on each side until pink and opaque. Transfer to the plate with vegetables.
- Pour chicken broth into the frying pan, scraping up bits from the bottom. Boil and reduce to about ¼ cup, approx. 4-5 minutes.
- Mix sour cream and cornstarch in a bowl until smooth, then stir into the broth in the pan. Cook for 3-4 minutes until sauce thickens.
- Combine cooked shrimp and sautéed vegetables back into the sauce. Season with salt and pepper, heat through for an additional 2-3 minutes.
- Serve the Blackened Shrimp Stroganoff over warmed fettuccini, garnishing with fresh herbs if desired.
