Preparation Steps
- In a large mixing bowl, combine 2 cups of diced fresh pineapple, 1 cup of thinly sliced cucumber, and ½ cup of finely sliced red onion. Gently mix without bruising the pineapple.
- In a separate small bowl, whisk together 1 teaspoon of chili powder, the juice of 2 limes, 1 tablespoon of honey or maple syrup, and a pinch of salt until smooth.
- Pour the dressing over the salad mixture and gently toss to coat evenly.
- Cover the bowl with plastic wrap and let the salad rest for 10–15 minutes at room temperature.
- Just before serving, sprinkle chopped fresh cilantro or mint over the top.
