Method
 

Preparation Steps
  1. In a large mixing bowl, combine 2 cups of diced fresh pineapple, 1 cup of thinly sliced cucumber, and ½ cup of finely sliced red onion. Gently mix without bruising the pineapple.
  2. In a separate small bowl, whisk together 1 teaspoon of chili powder, the juice of 2 limes, 1 tablespoon of honey or maple syrup, and a pinch of salt until smooth.
  3. Pour the dressing over the salad mixture and gently toss to coat evenly.
  4. Cover the bowl with plastic wrap and let the salad rest for 10–15 minutes at room temperature.
  5. Just before serving, sprinkle chopped fresh cilantro or mint over the top.
