  • 8 ounces pasta penne or fusilli
  • 1 can 5 ounces tuna in water, drained
  • 1 cup cherry tomatoes halved
  • 1/2 cup basil pesto
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Method
 

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large mixing bowl, combine the drained tuna, halved cherry tomatoes, basil pesto, and olive oil. Mix gently to combine.
  3. Add the cooked pasta to the bowl and toss everything together until the pasta is well coated with the pesto mixture.
  4. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  5. Serve immediately, garnished with fresh basil leaves if desired.
