Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup queso dip
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup sliced jalapeños optional
  • 1/4 cup chopped fresh cilantro
  • 1 lime cut into wedges
  • Salt and pepper to taste

Method
 

  1. In a medium saucepan, heat the shredded chicken over medium heat until warmed through. Stir in the queso dip until well combined and heated. Season with salt and pepper to taste.
  2. While the chicken and queso mixture is heating, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  3. To assemble the tacos, place a generous scoop of the queso chicken mixture in the center of each tortilla.
  4. Top with shredded lettuce, diced tomatoes, red onion, and jalapeños if using.
  5. Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the tacos.
