In a large mixing bowl, combine the almond butter, tahini, honey (or maple syrup), vanilla extract, and salt. Mix until smooth and well combined.
Stir in the rolled oats and pomegranate seeds until evenly distributed. If using, add the shredded coconut and mix well.
Refrigerate the mixture for about 30 minutes to firm up, making it easier to handle.
Once chilled, use your hands to form small balls (about 1 inch in diameter) from the mixture. Place the balls on a parchment-lined baking sheet.
Return the baking sheet to the refrigerator for another 15-20 minutes to set.
Store the bites in an airtight container in the refrigerator for up to one week.
