- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar for 3-5 minutes.
- Add 1 egg and 2 teaspoons of vanilla extract, mixing until combined.
- In a separate bowl, whisk together 2 cups of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Gradually incorporate into the wet mixture.
- Roll about 1½ tablespoons of dough into balls and flatten them on the baking sheets.
- Place one canned pineapple ring on each flattened cookie and press down gently.
- Sprinkle sugar on top of each pineapple ring.
- Bake for 12-14 minutes until the edges are golden and centers are set.
