For the Teriyaki Sauce
  • 1/2 cup Water adjust for thickness.
  • 2 tablespoons Cornstarch mix with water before adding.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 500°F and prepare a greased baking sheet.
  2. In a large mixing bowl, combine ground chicken, panko breadcrumbs, crushed pineapple, milk, soy sauce, green onions, garlic, ginger, and black pepper.
  3. Shape the mixture into golf ball-sized meatballs and place them on the baking sheet.
  4. Bake the meatballs in the preheated oven for 15 minutes until golden brown and reaching an internal temperature of 165°F.
  5. In a saucepan, combine soy sauce, brown sugar, water, reserved pineapple juice, garlic, and ginger to make the teriyaki sauce.
  6. Mix cornstarch with water until smooth and add to the sauce to thicken.
  7. Once meatballs are baked, mix them gently with the thickened teriyaki sauce.
  8. Serve the meatballs over rice, garnished with green onions or sesame seeds.
