Ingredients
  

  • 2 ripe bananas
  • 1 cup creamy peanut butter
  • 1 cup rolled oats
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips optional

Method
 

  1. Peel the bananas and slice them into 1/2-inch thick rounds.
  2. In a mixing bowl, combine the peanut butter, honey, vanilla extract, and salt. Stir until smooth and well blended.
  3. Add the rolled oats to the peanut butter mixture and mix until fully combined. If using, fold in the mini chocolate chips.
  4. Take a banana slice, scoop about a teaspoon of the peanut butter mixture on top, and place another banana slice on top to create a sandwich. Repeat until all banana slices are used.
  5. Place the assembled banana bites on a parchment-lined baking sheet.
  6. Freeze the bites for at least 1 hour or until firm.
  7. Once frozen, transfer the bites to an airtight container and store in the freezer for up to 2 months.
