Ingredients
  

  • 2 ripe bananas
  • 1 cup creamy peanut butter
  • 1 cup rolled oats
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup mini chocolate chips optional
  • 1/4 cup chopped nuts optional

Method
 

  1. Peel the bananas and slice them into 1/2-inch thick rounds.
  2. In a medium bowl, mix together the peanut butter, rolled oats, vanilla extract, and cinnamon until well combined.
  3. If using, fold in the mini chocolate chips and chopped nuts.
  4. Take a slice of banana and spread a generous amount of the peanut butter mixture on top. Place another banana slice on top to create a sandwich.
  5. Repeat this process until all banana slices are used.
  6. Arrange the banana bites on a baking sheet lined with parchment paper.
  7. Freeze the banana bites for at least 1 hour or until firm.
  8. Once frozen, transfer the bites to an airtight container and store in the freezer.
