- Begin by carefully removing the giblets from the cavity of your thawed turkey. Pat the turkey dry inside and out using paper towels.
- If you prefer smoother carving, remove the wishbone from the breast of the turkey.
- In a bowl, combine kosher salt, ground black pepper, baking powder, dark brown sugar, garlic powder, dried thyme, onion powder, and smoked paprika. Mix thoroughly.
- Generously rub the seasoning mix all over the turkey, ensuring it gets under the skin and inside the cavity. Refrigerate uncovered for 12 hours to 2 days.
- Position your oven rack to the lowest setting and preheat your oven to 450°F (232°C).
- Fill the cavity of your turkey with quartered shallots, halved garlic, quartered lemon, fresh sage, and thyme. Drizzle the inside with neutral oil.
- Carefully place the turkey on a roasting rack inside a large roasting pan. Roast at 450°F for the first 30 minutes, reduce to 350°F and continue roasting.
- Once the turkey is beautifully golden and cooked through, remove it from the oven and let it rest uncovered for 45 minutes.
