Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups broccoli florets
  • 1 cup low-sodium chicken broth
  • 1 cup cooked rice white or brown
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon red pepper flakes optional
  • ¼ cup grated Parmesan cheese optional

Method
 

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  2. Add the broccoli florets to the skillet and pour in the chicken broth. Bring to a simmer, cover, and cook for about 5 minutes, or until the broccoli is tender.
  3. Stir in the cooked rice, soy sauce, lemon juice, and red pepper flakes (if using). Mix well and cook for an additional 2-3 minutes until everything is heated through.
  4. If desired, sprinkle with grated Parmesan cheese before serving.
