Ingredients
  

  • 3 ripe bananas mashed
  • 1/3 cup olive oil
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon optional
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas and olive oil. Mix until well combined.
  3. Add the granulated sugar, brown sugar, eggs, and vanilla extract to the banana mixture. Stir until smooth.
  4. In a separate bowl, whisk together the baking soda, salt, flour, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  6. If desired, fold in the chopped walnuts or pecans.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
