  • 2 cups fresh sauerkraut use fresh for optimal flavor
  • 0.5 cup finely diced red onion or sweet onion for milder taste
  • 1 cup diced bell peppers optional, add color and crunch
  • 0.5 cup shredded carrots adds sweetness and extra crunch
For the Dressing
  • 3 tablespoons olive oil rich and fruity
  • 2 tablespoons apple cider vinegar adds brightness
  • to taste salt essential for seasoning
  • to taste pepper essential for seasoning

Method
 

Preparation
  1. In a large mixing bowl, place 2 cups of fresh sauerkraut and ½ cup of finely diced red onion. Gently combine the two ingredients.
  2. If desired, incorporate 1 cup of diced bell peppers and ½ cup of shredded carrots into the mixture. Stir until evenly distributed.
  3. In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of apple cider vinegar, and a pinch of salt and pepper.
  4. Drizzle the dressing over the salad mixture and toss gently to ensure all ingredients are coated.
  5. Cover the salad and chill for at least 1 hour or ideally overnight to enhance the flavors.
  6. Once chilled, give the salad a quick toss before serving and enjoy it alongside grilled meats.
