- In a large mixing bowl, place 2 cups of fresh sauerkraut and ½ cup of finely diced red onion. Gently combine the two ingredients.
- If desired, incorporate 1 cup of diced bell peppers and ½ cup of shredded carrots into the mixture. Stir until evenly distributed.
- In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of apple cider vinegar, and a pinch of salt and pepper.
- Drizzle the dressing over the salad mixture and toss gently to ensure all ingredients are coated.
- Cover the salad and chill for at least 1 hour or ideally overnight to enhance the flavors.
- Once chilled, give the salad a quick toss before serving and enjoy it alongside grilled meats.
