In a food processor, combine the pitted dates and raw almonds. Pulse until they are finely chopped and start to clump together.
Add the rolled oats, almond butter, shredded coconut, vanilla extract, sea salt, and cinnamon (if using) to the food processor. Pulse until the mixture is well combined and sticky.
Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. If the mixture is too sticky, dampen your hands slightly to make rolling easier.
Place the energy bites on a parchment-lined baking sheet or plate. Once all the mixture is rolled, refrigerate the bites for at least 30 minutes to firm up.
Store the energy bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
