Method
 

Step-by-Step Instructions
  1. In a bowl, whisk together Greek yogurt, lemon juice, garlic, and spices. Coat chicken thighs in marinade and refrigerate for at least 4 hours.
  2. Slice a medium onion into rings and layer at the bottom of the slow cooker.
  3. Place marinated chicken on top of the onions, cover, and cook on high for 3-4 hours or low for 4-6 hours.
  4. Remove chicken, shred it, and return to the slow cooker. Stir to blend with juices for 10 minutes.
  5. Prepare yogurt sauce by mixing yogurt, garlic, cucumber, cumin, lemon juice, salt, and pepper. Chill.
  6. Warm pitas, fill with shredded chicken, yogurt sauce, cucumbers, tomatoes, lettuce, and red onion to serve.
