- In a bowl, whisk together Greek yogurt, lemon juice, garlic, and spices. Coat chicken thighs in marinade and refrigerate for at least 4 hours.
- Slice a medium onion into rings and layer at the bottom of the slow cooker.
- Place marinated chicken on top of the onions, cover, and cook on high for 3-4 hours or low for 4-6 hours.
- Remove chicken, shred it, and return to the slow cooker. Stir to blend with juices for 10 minutes.
- Prepare yogurt sauce by mixing yogurt, garlic, cucumber, cumin, lemon juice, salt, and pepper. Chill.
- Warm pitas, fill with shredded chicken, yogurt sauce, cucumbers, tomatoes, lettuce, and red onion to serve.
