  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander or add more cumin
  • 1 teaspoon smoked paprika regular paprika is a substitute

For the Tahini-Honey Sauce
  • 1/4 cup tahini sunflower seed butter is a nut-free alternative
  • 2 tablespoons honey maple syrup for vegan option
  • 1 tablespoon lemon juice lime juice can be used
For Garnishing
  • 1/4 cup fresh parsley cilantro can be used as an alternative
  • 2 tablespoons sesame seeds optional

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C) for optimal roasting.
  2. Chop cauliflower into bite-sized florets and place in a mixing bowl.
  3. Mix olive oil, cumin, coriander, smoked paprika, salt, and pepper in a bowl and coat the cauliflower.
  4. Spread on a parchment-lined baking sheet and roast for 20-25 minutes.
  5. Combine tahini, honey, lemon juice, and a pinch of salt in a small bowl.
  6. Pour the tahini-honey sauce over roasted cauliflower and sprinkle with parsley and sesame seeds.
  7. Serve warm as a side dish or main course.
