Step-by-Step Instructions
  1. Prepare the French or Italian bread by cutting it into 1-inch pieces, and allow it to dry overnight or bake at 250°F for 10-12 minutes.
  2. Preheat your oven to 375°F and grease a 9x13-inch baking dish.
  3. Trim and slice the cremini mushrooms, and dice the yellow onion.
  4. In a skillet, melt the butter over medium-high heat, and add the mushrooms, onion, thyme, salt, and pepper. Cook for 8-10 minutes until golden brown.
  5. Stir in the baby spinach and cook until wilted, about 2-3 minutes.
  6. Pour in the broth, scrape the pan to deglaze, and let it simmer for a few minutes.
  7. In a bowl, combine the dried bread with the sautéed mixture and half the Swiss cheese.
  8. Spread the mixture in the baking dish, top with the remaining Swiss cheese, and bake for 35-40 minutes.
