- Prepare the French or Italian bread by cutting it into 1-inch pieces, and allow it to dry overnight or bake at 250°F for 10-12 minutes.
- Preheat your oven to 375°F and grease a 9x13-inch baking dish.
- Trim and slice the cremini mushrooms, and dice the yellow onion.
- In a skillet, melt the butter over medium-high heat, and add the mushrooms, onion, thyme, salt, and pepper. Cook for 8-10 minutes until golden brown.
- Stir in the baby spinach and cook until wilted, about 2-3 minutes.
- Pour in the broth, scrape the pan to deglaze, and let it simmer for a few minutes.
- In a bowl, combine the dried bread with the sautéed mixture and half the Swiss cheese.
- Spread the mixture in the baking dish, top with the remaining Swiss cheese, and bake for 35-40 minutes.
