  • 1 small Red Onion finely diced
  • 1/2 cup Kalamata Olives pitted and sliced
  • 1/2 cup Feta Cheese crumbled, or substitute with dairy-free cheese
  • 1/4 cup Parsley chopped, or substitute with mint
For the Dressing
  • 3 tablespoons Olive Oil preferably extra virgin
  • 2 tablespoons Lemon Juice freshly squeezed
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano or use fresh oregano
  • to taste Salt
  • to taste Black Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prick sweet potatoes with a fork, roast for 40-50 minutes until fork-tender.
  3. Chop vegetables for filling and combine chickpeas, cherry tomatoes, cucumber, red onion, olives, feta, and parsley in a bowl.
  4. In a separate bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper for the dressing.
  5. Drizzle dressing over the filling mixture and toss until well-coated.
  6. Slice roasted sweet potatoes lengthwise, fluff insides, and fill with Mediterranean mixture.
  7. Serve warm, enjoy as a nutritious lunch or dinner.
