- In a medium mixing bowl, combine shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and a sprinkle of black pepper. Mix gently until well combined.
- Lay one tortilla flat and scoop a quarter of the filling onto one half of the tortilla. Fold the other half over and press down to seal.
- Heat a non-stick skillet over medium heat and drizzle olive oil, heating for 1-2 minutes.
- Place the folded quesadilla in the hot skillet. Cook for 3-4 minutes until golden, pressing down gently.
- Flip the quesadilla and cook for another 3-4 minutes until both sides are crispy.
- Remove and let it cool for a couple of minutes before slicing into wedges.
