Ingredients
  

Filling
  • 1 cup Mozzarella Cheese Shredded; can substitute with vegan cheese.
  • 1/2 cup Feta Cheese Crumbled; dairy-free feta for vegan diets.
  • 2 cups Fresh Spinach Can replace with kale or other leafy greens.
  • 1 medium Tomato Diced; substitute with roasted red peppers for variation.
  • 1/4 medium Red Onion Sliced; or use green onions as a milder alternative.
Assembly
  • 2 large Tortillas Can use whole wheat or gluten-free.
  • 1 tablespoon Olive Oil Can substitute with avocado oil or cooking spray.
Seasoning
  • 1 teaspoon Black Pepper Feel free to add dried herbs.

Method
 

Preparation
  1. In a medium mixing bowl, combine shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and a sprinkle of black pepper. Mix gently until well combined.
  2. Lay one tortilla flat and scoop a quarter of the filling onto one half of the tortilla. Fold the other half over and press down to seal.
  3. Heat a non-stick skillet over medium heat and drizzle olive oil, heating for 1-2 minutes.
  4. Place the folded quesadilla in the hot skillet. Cook for 3-4 minutes until golden, pressing down gently.
  5. Flip the quesadilla and cook for another 3-4 minutes until both sides are crispy.
  6. Remove and let it cool for a couple of minutes before slicing into wedges.
