  • 1 pound Ground Beef Use 85% lean or higher
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 medium Onion Yellow or white onions
  • 3 cloves Garlic Freshly minced
  • 1 medium Bell Pepper Any color
  • 1 medium Zucchini Or eggplant/yellow squash
  • to taste Salt
  • to taste Black Pepper Freshly ground
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • to taste Red Pepper Flakes Adjust to heat preference
  • 1 cup Cherry Tomatoes Halved
  • 1/2 cup Kalamata Olives
  • 1/4 cup Fresh Parsley Chopped
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1/2 cup Feta Cheese Crumbled
  • 2 tablespoons Pine Nuts Toasted
  • to taste Sumac Optional

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a large skillet over medium heat until shimmering, about 1-2 minutes.
  2. Sauté chopped onion for 2-3 minutes until softened and fragrant.
  3. Add minced garlic and sauté for 30 seconds. Avoid browning.
  4. Add ground beef, breaking it apart, and season with salt, black pepper, cumin, paprika, oregano, and red pepper flakes. Cook for 5-7 minutes until browned.
  5. Fold in diced bell pepper and zucchini, sautéing for another 5 minutes.
  6. Stir in halved cherry tomatoes and kalamata olives, cooking for an additional 2 minutes.
  7. Remove from heat and stir in chopped parsley and lemon juice.
  8. Serve warm, garnishing with feta cheese and toasted pine nuts if desired.
