  • 2 cups Tomatoes juicy and in-season
  • 1 medium Red Bell Pepper can substitute with yellow or orange
  • 1 medium Red Onion can use yellow onion for milder taste
  • 2 cloves Garlic fresh minced
Feta Mixture
  • 8 oz Feta Cheese block feta preferred
  • 2 tbsp Olive Oil extra virgin for best flavor
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 tsp Red Pepper Flakes adjust to taste
Greens and Eggs
  • 2 cups Spinach can swap with kale
  • 1 tbsp Lemon Zest for brightness
  • 4 large Eggs room temperature preferred

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Dice the red bell pepper, slice the red onion, and halve the tomatoes. Mince the garlic.
  3. Combine oregano, thyme, salt, black pepper, and red pepper flakes in a small bowl.
  4. In a baking dish, spread the vegetables and block feta cheese. Drizzle with olive oil and sprinkle spice mix.
  5. Bake for 25 minutes until vegetables soften and feta is warm.
  6. Stir in spinach and create wells for the eggs.
  7. Crack the eggs into the wells and sprinkle with lemon zest.
  8. Bake for an additional 8-10 minutes until egg whites set but yolks remain runny.
  9. Let rest for a few minutes before serving warm.
