Preparation
- Preheat your oven to 350°F (175°C) and line an 8 or 9-inch square pan with parchment paper.
- In a bowl, combine diced mango, ¼ cup of granulated sugar, cornstarch, lemon juice, and vanilla extract, mixing gently.
- In another bowl, whisk together flour, ¾ cup of sugar, brown sugar, baking powder, and salt. Add melted butter and beaten egg, mixing until crumbly.
- Press two-thirds of the crumb mixture into the bottom of the prepared pan, spread the mango filling, and sprinkle the remaining crumb on top.
- Bake for 30-42 minutes until golden and bubbly. Allow to cool in the pan for at least 1 hour.
- Chill for another 30-60 minutes, then lift out using parchment and slice into squares.
