Ingredients
  

For the Mango Filling
  • 3 cups Mango, diced Use ripe mangoes for sweetness
  • 2 tablespoons Cornstarch To thicken the mango filling
  • 1 tablespoon Lemon or Lime Juice Freshly squeezed
  • 1 teaspoon Vanilla Extract
For the Crust and Crumble
  • 2 cups All-Purpose Flour Can substitute with gluten-free blend
  • 3/4 cup Granulated Sugar Adjust based on the sweetness of mangoes
  • 1/4 cup Light Brown Sugar, packed For moisture and flavor
  • 1 cup Old-Fashioned Oats Avoid instant oats
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Fine Salt
For Binding and Richness
  • 1 cup Unsalted Butter, melted Can be replaced with coconut oil
  • 1 large Egg, lightly beaten Omit for a vegan version

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8 or 9-inch square pan with parchment paper.
  2. In a bowl, combine diced mango, ¼ cup of granulated sugar, cornstarch, lemon juice, and vanilla extract, mixing gently.
  3. In another bowl, whisk together flour, ¾ cup of sugar, brown sugar, baking powder, and salt. Add melted butter and beaten egg, mixing until crumbly.
  4. Press two-thirds of the crumb mixture into the bottom of the prepared pan, spread the mango filling, and sprinkle the remaining crumb on top.
  5. Bake for 30-42 minutes until golden and bubbly. Allow to cool in the pan for at least 1 hour.
  6. Chill for another 30-60 minutes, then lift out using parchment and slice into squares.
