Ingredients
  

  • 2 cups cooked brown rice
  • 1 can 15 oz black beans, rinsed and drained
  • 1 large ripe mango diced
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup red onion finely chopped
  • 1 lime juiced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the cooked brown rice, black beans, diced mango, cherry tomatoes, red bell pepper, avocado, cilantro, and red onion. Gently toss to mix all the ingredients evenly.
  2. In a small bowl, whisk together the lime juice, grated ginger, olive oil, salt, and pepper until well combined.
  3. Drizzle the ginger lime dressing over the rice bowl mixture and toss gently to coat all ingredients with the dressing.
  4. Taste and adjust seasoning if necessary, adding more salt, pepper, or lime juice as desired.
  5. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld together.
