Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Peel, core, and chop the cooking and eating apples into bite-sized pieces. Melt 45 g of butter in a saucepan, add apples, caster sugar, and lemon rind, sauté for 5-7 minutes.
  3. Transfer the softened apples to a baking dish, spreading evenly.
  4. In the same saucepan, melt the remaining 45 g of butter over low heat. Stir in plain flour to create a roux, about 2 minutes. Gradually whisk in whole milk and cook until thickened.
  5. Remove from heat, cool slightly, and whisk in egg yolks and vanilla until smooth.
  6. Pour the custard over the sautéed apples in the baking dish.
  7. Mix demerara sugar with ground cinnamon and sprinkle over the custard. Bake for 20 minutes until golden brown.
