- Preheat your oven to 180°C (350°F).
- Peel, core, and chop the cooking and eating apples into bite-sized pieces. Melt 45 g of butter in a saucepan, add apples, caster sugar, and lemon rind, sauté for 5-7 minutes.
- Transfer the softened apples to a baking dish, spreading evenly.
- In the same saucepan, melt the remaining 45 g of butter over low heat. Stir in plain flour to create a roux, about 2 minutes. Gradually whisk in whole milk and cook until thickened.
- Remove from heat, cool slightly, and whisk in egg yolks and vanilla until smooth.
- Pour the custard over the sautéed apples in the baking dish.
- Mix demerara sugar with ground cinnamon and sprinkle over the custard. Bake for 20 minutes until golden brown.
