Preparation Steps
- Step 1: Prepare Ingredients - Allow cream cheese (or coconut butter) and butter to reach room temperature for about 30 minutes. Zest one lemon and set aside.
- Step 2: Blend the Base - In a bowl, combine softened cream cheese (or coconut butter), butter, powdered sugar (or erythritol), and lemon zest. Blend until smooth, about 2-3 minutes.
- Step 3: Shape the Truffles - Shape truffles by either chilling the mixture in a lined container or scooping into bite-sized balls and freezing for 30-60 minutes.
- Step 4: Optional Coating - Melt chocolate chips or coconut butter in intervals. Stir in ½ teaspoon of oil for a silky consistency.
- Step 5: Dip and Set - Dip each truffle into melted coating, allow excess to drip off, and place back on parchment. Let set for 10-15 minutes.
- Step 6: Final Touches - Once set, cut each truffle in half for presentation. Store any leftovers in an airtight container.
