Cooking Steps
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs or breasts dry with paper towels and season with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat and sear the chicken for about 5-6 minutes skin-side down.
- Flip the chicken and sear the other side for another 2 minutes, then transfer it to a plate.
- In the same skillet, add more olive oil and sauté the shallots for 2 minutes, then add minced garlic for another minute.
- Stir in lemon zest, juice, dry white wine, Dijon mustard, and fresh herbs, scraping the bottom for flavor.
- Return the chicken to the skillet, spoon some sauce over it, and roast in the oven for 18-20 minutes.
- Remove from the oven and let the chicken rest for 5 minutes before serving with fresh herbs and lemon slices.
