Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine oats, peanut butter, maple syrup, coconut oil, lemon zest, lemon juice, vanilla extract, and salt. Mix until sticky.
  2. If the mixture is crumbly, add more peanut butter or coconut oil, one tablespoon at a time, until the right consistency is achieved.
  3. Scoop out about 2 tablespoons of the mixture and shape into cookies, about 1 inch thick.
  4. Place cookies on a lined baking sheet and refrigerate for at least 30 minutes to firm up.
  5. Enjoy immediately or store in an airtight container in the fridge for up to a week.
